Pizelles

You make these on an iron, kinda like a waffle iron but has pretty designs on both sides and makes a thinner cookie.

1 lb Butter-room temp and creamed
8 eggs
2 3/4 cups sugar

4 1/2 cups flour
1 tsp baking powder
1 tbsp anise oil, other flavors can be used but you need to use an oil

Cream butter with mixer, on low speed mix in eggs one at a time. The mixture is pretty funky looking. Don't over beat. By hand mix in sugar. Add in flour and baking powder 1/4 at a time, mix until incorporated and then next 1/4 until all is added. Add oil last and mix well.

Get iron hot and spray with non stick spray.

Place one tsp of batter on each iron and cook for about 10-15 seconds. Cookie will not brown much. Batter burns easily so if it is browning it is starting to burn. Cookies will be soft and moist when taken off the iron. I use a rubber spatula and my hands to do this. Set on a raised cooling rack. If you set them flat they will absorb the moisture and be soft. When the cookies cool they should be crisp, shatter if dropped.
