Spanish Rub

2 tbsp extra virgin olive oil
2 tbsp chopped parsley
2 tbsp dry sherry
2 garlic cloves, minced
2 tsp Spanish smoked paprika (pimenton de la Vera)
2 tsp kosher salt
1/2 small red onion, minced
1/2 tsp fennel seeds, chopped

Mix into a paste, rub into chicken. Bake.
